This peanut butter jelly jalapeno spinach sandwich is something Jason and I have been eating recently.  Taking a classic and making it more!  We had it for a breakfast this morning, but could also be for a snack too.  When a combination of gooey, spicy and sweet meet, this one will melt in your mouth and leave you wanting more.

I always felt that peanut butter and jelly wasn’t enough of a sandwich and so jalapeno and spinach was added.  It does make this sandwich much more filling and gives more of a hardness to it.

  • Peanut butter 2-3 T.
  • Your favorite Jelly - I used strawberry 2-3 T.
  • jalapeno 1
  • whole wheat bread 2
  • handful of spinach
  • olive oil 2-3 T.
  1.  Spread peanut butter on 1 side of the bread and add jelly to the other slice of bread.
  2. Add jalapenos and spinach.
  3. Turn on stove to medium heat and add oil.  Let it get get hot about 30 seconds to a 1 min.  Then add the sandwiches and cover.
  4. It takes about 3-4 min. to brown and then flip the sandwich .  Cook for another 2-3 min and remove.
  5. Cut sandwich and eat!
