Vegan Avocado power bowl

Lately, I have been making a lot of these.  If you want to something to fill you up, this is it.  Full of fat which is needed in a low fat diet to keep that weight on.  This recipe is enough for Jason and I. 

Vegan Avocado power bowl

  • 1 cup cashews (soaked)
  • 8 dates (remove seed and soaked)
  • 1 avocado
  • 1 t. vanilla extract
  • 1 1/2 -2 frozen bananas
  • about 2 good handfuls of spinach
  • 1 heaping spoonful peanut butter
  • 1 cup coconut milk
  • a dash of sea salt
  • Flax seed

1. Soak cashews and dates with warm water no less than 15 min. The longer it sits, the smoother the bowl.

2. Add everything to a food processor or blender except for flax seed.

3. Put in 2 bowls and serve with flax seed on top. Enjoy!

Other stuff you could add:

I like to switch things often to make things interesting.  What would also be good would be some chocolate and peppermint extract.

If you don’t have dates, you could also add agave or maple syrup.

Instead of peanut butter, add a different nut butter such as almond butter.

Other fruits such as pineapple would be good!

Try almond milk instead of coconut milk.

Top with some walnuts!
